Set 2 of the biscoff biscuits aside. Add the remaining biscuits and cream cheese to a food processor and blend until combined.
Roll into 12 balls and leave in the freezer for 30 minutes.
Melt the white chocolate, drizzle on top of each one. Crush up the 2 biscuits and sprinkle on top.
Leave in the freezer until the chocolate has set.
Store in the fridge.
