Avocado and cannellini bean salad

This avocado and cannellini bean salad is sure to satisfy while keeping things simple and convenient. It's perfect to have as a side to your main meals, a light lunch or as a snack with corn chips!

Ingredients

  • 2 cups baby spinach chopped
  • 1 cucumber diced
  • 1 can (400g) cannellini beans rinsed and drained
  • 1 avocado diced
  • 1/4 cup fresh parsely finely chopped
  • 1/4 cup fresh dill finely chopped
  • 2 spring onion finely chopped

dressing

  • 1 1/2 tbsp olive oil
  • 1 tbsp dijon mustard
  • juice of 1/2 a lemon
  • 1/2 tbsp honey
  • 1 tsp minced garlic
  • salt/pepper to taste

Instructions

  • Add all ingredients for the salad into a large salad bowl.
  • In a small bowl combine all ingredients for the dressing.
  • Pour dressing over the salad.
    Mix, serve and enjoy!

Notes

This is great served as a side dish or a snack with corn chips!
