Ingredients

  • 1 sourdough cob loaf or regular cob loaf
  • 200 g brie
  • 150 g diced bacon
  • 1 1/2 tbsp honey
  • thyme
  • olive oil

Instructions

  • Preheat oven to 180°c and line a baking tray.
  • Cut the top off the cob loaf and hollow out the centre to the size of the brie.
  • Cut the sides of the bread to create pull apart pieces leaving the bottom intact.
  • Pan fry the bacon until crispy. Cut the top off the brie and add into the bread along with the honey, bacon and thyme.
  • Add the bread to the baking tray along with the top of the sourdough and pieces removed from the centre. Drizzle over some olive oil and add salt and pepper.
  • Bake for 20 minutes or until the cheese has melted and the bread is golden. Serve warm from the oven. Dip pieces of the bread into the brie and enjoy!
