Banana bread

There's nothing better than a freshly baked loaf of banana bread. This recipe is so simple and perfect for the next time you have some overripe bananas that need to be eaten!

Ingredients

  • 2 bananas + 1 more for on top - optional
  • 1 egg
  • 1 cup almond milk or milk of choice
  • 1/3 cup olive oil or melted coconut oil
  • 1/3 cup honey or liquid sweetener of choice
  • 1 tsp vanilla extract
  • 2 cups self raising flour
  • 2 tsp cinnamon
  • pinch of salt

Instructions

  • Preheat oven to 180ºc (fan forced) and line a loaf tin.
  • In a bowl mash the bananas and add in egg, milk, olive oil, honey, vanilla extract and mix until combined. Mix in flour, cinnamon and salt.
  • Place mixture into the lined loaf tin. If you're adding extra banana on top, slice in half (long ways) and add on top of the mixture. Bake for 45-50 minutes (or until cooked)
  • Let cool, slice up and enjoy!

Notes

Store in the cupboard for 3-4 days or freeze for a few months. 
My favourite way to eat banana bread is toasted with some butter!
