Banana bread with cream cheese icing

This simple recipe combines the warm and cozy flavours of banana bread with a tasty cream cheese icing, creating a delightful treat that's perfect for any occasion.

Ingredients

  • 2 bananas + 1 for on top - optional
  • 1 egg
  • 1 cup almond milk or milk of choice
  • 1/3 cup coconut oil or olive oil or butter
  • 1/3 cup honey or liquid sweetener of choice
  • 1 tsp vanilla extract
  • 2 cups self raising flour
  • 2 tsp cinnamon
  • pinch of salt

Cream cheese icing

  • 225g cream cheese
  • 1/4 cup greek yoghurt
  • 1/4 cup honey or liquid sweetener of choice
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 180Âșc (fan forced) and line a loaf tin.
  • In a bowl mash the bananas and add in egg, milk, coconut oil, honey, vanilla extract and mix until combined.
  • Mix in flour, cinnamon and salt.
  • Place mixture into the lined loaf tin. If you're adding extra banana on top, slice in half (long ways) and add on top of the mixture. Bake for 45-50 minutes (or until cooked)
  • While the banana bread is cooking, add the cream cheese, greek yoghurt and sweetener into a food processor and blend until smooth. Leave in the fridge until the banana bread has cooked and cooled.
  • Once cool, add the cream cheese icing on top along with a sprinkle of cinnamon.
  • Slice up and enjoy!

Notes

Store in the fridge in an airtight container - it lasts about 3 days
