Banana cake with cream cheese icing

The banana cake is soft and moist, topped with the most delicious cream cheese icing…every bite tastes like perfection!

Ingredients

  • 2 bananas mashed
  • 2 eggs
  • 1/3 cup olive oil
  • 1/3 cup honey or liquid sweetener of choice
  • 2/3 cup almond milk or milk of choice
  • 2 tsp vanilla extract
  • 2 cups plain flour
  • 2 tsp baking powder
  • 2 tsp cinnamon

Icing

  • 125 g cream cheese at room temp
  • 60 g butter at room temp
  • 1 1/2 cups icing sugar

Instructions

  • Preheat oven to 180°c and line a 8x8 baking pan.
  • To a bowl add the banana, eggs, sweetener, oil, milk, vanilla and mix. Add in the flour, cinnamon, baking powder and mix until combined.
  • Transfer mixture to the lined tray and bake for 25-30 minutes or until cooked. Let cool completely.
  • While the cake is cooking, add the cream cheese, butter and icing sugar to a food processor and blend until smooth. Leave in the fridge until the cake has cooled.
  • Add the cream cheese icing on to the cake. Slice into 9 pieces.

Notes

Store in the fridge, it lasts about 3-4 days.
