Banana pancake bites

These banana pancake bites are such a fun, easy and delicious weekend breakfast idea!

Ingredients

  • 1 banana
  • 1/2 cup rolled oats
  • 2 tbsp (heaped) greek yoghurt
  • 1-2 tbsp maple syrup or sweetener of choice
  • 1 egg
  • 1 tsp cinnamon

Instructions

  • To a blender add oats, yoghurt, maple syrup, egg, cinnamon, baking powder and blend until combined.
  • Slice up your banana and pour the pancake batter into a small bowl. Coat each banana slice and add to a non stick pan. Cook on medium until golden (about 3 minutes per side)
  • Once cooked add your favourite toppings and enjoy!
