Berry Banana Bread

Ingredients

Berry Compote

  • 1 1/2 cup frozen berries
  • 1 tbsp maple syrup
  • juice of half lemon

Banana bread

  • 2 bananas mashed
  • 1 egg
  • 1/3 cup maple syrup or liquid sweetener of choice
  • 1/3 cup melted butter or melted coconut oil/olive oil
  • 1 cup almond milk or milk of choice
  • 2 cups self raising flour
  • 2 tsp cinnamon
  • 2 tsp vanilla extract
  • pinch of salt

Instructions

  • First start by making the berry compote. Heat a saucepan to medium heat and add the frozen mixed berries, maple syrup and lemon juice. Mix and let simmer for 5 minutes, stirring occasionally. If needed use a masher to crush the berries. Set aside in the fridge to cool completely.
  • Preheat oven to 180°c (fan forced) and line a loaf tin (21.5cmx13cmx12cm)
  • In a bowl add mashed banana, egg, maple syrup, vanilla extract, melted butter, almond milk and combine. Add in flour, cinnamon, salt and mix.
  • Fold in the berry compote and transfer mixture to the loaf tin. Bake for 50-55 minutes or until cooked.
  • Let cool, slice up and enjoy!

Notes

Store in the cupboard for 2-3 days. It's also freezer friendly!
