First start by making the berry compote. Heat a saucepan to medium heat and add the frozen mixed berries, maple syrup and lemon juice. Mix and let simmer for 5 minutes, stirring occasionally. If needed use a masher to crush the berries. Set aside in the fridge to cool completely.
Preheat oven to 180°c (fan forced) and line a loaf tin (21.5cmx13cmx12cm)
In a bowl add mashed banana, egg, maple syrup, vanilla extract, melted butter, almond milk and combine. Add in flour, cinnamon, salt and mix.
Fold in the berry compote and transfer mixture to the loaf tin. Bake for 50-55 minutes or until cooked.
Let cool, slice up and enjoy!
