Birthday Cake Donuts

Fluffy baked donuts, with a delicious icing topped with sprinkles...the perfect snack or dessert if you ask me!

Ingredients

  • 3/4 cup self raising flour
  • 1/4 cup vanilla protein powder or substitute for almond meal
  • 1 tsp vanilla extract
  • 1 egg
  • 1/2 almond milk or milk of choice
  • 1/4 cup maple syrup or liquid sweetener of choice

Icing

  • 1/4 cup smooth ricotta
  • 2 tbsp greek yoghurt
  • 2-3 tbsp maple syrup or sweetener of choice
  • sprinkles

Instructions

  • Preheat your oven to 180°c (fan forced)
  • In a bowl combine flour and protein powder. Add in egg, milk, vanilla extract, maple syrup and mix until combined. Transfer the mixture into a silicone donut mould. Bake at 180°c for 15 minutes.
  • While the donuts are cooking make the icing by combining the Greek yoghurt, ricotta and maple syrup. Leave in the fridge while the donuts cook and cool.
  • Let donuts cool completely then add icing on top as well as the sprinkles.
