BLAT salad

This BLAT salad is fresh, flavourful and perfect as a side dish or light meal. Ideal for BBQs, picnics and gatherings with friends or family, this salad is sure to be a hit!

Ingredients

  • 1 head of cos lettuce chopped
  • 1 punnet of cherry tomatoes diced
  • 200g bacon pan fried
  • 1 avocado diced
  • 1/2 a red onion
  • 220g cherry bocconcini

Dressing

  • 2 heaped tbsp greek yoghurt
  • 1 tbsp dijon mustard
  • Juice of half a lemon
  • 1/2 tbsp minced garlic
  • 1 tsp mixed dried herbs
  • salt and pepper to taste

Instructions

  • In a small bowl, combine all the ingredients for the dressing.
  • Add all the ingredients into a large salad bowl and pour over the dressing.
  • Mix, serve and enjoy!
