Dice the apples and add to a saucepan over medium heat along with the maple syrup and cinnamon. Mix and let cook for 10 minutes or until soft. Set aside to cool.
Preheat oven to 180°c and line an 8x8 baking tray.
In a bowl add the applesauce, maple syrup, egg, melted butter and combined. Add in the flour, baking powder, cinnamon and mix until combined. Fold in the caramelised apple.
Transfer the mixture to the lined baking dish and bake for 22 minutes or until cooked.
While the blondie is cooking, make the caramel (recipe linked above)
Once the blondies are cooked allow to cool, drizzle on the caramel sauce, slice up and enjoy.
Notes
Store in the cupboard for around 2 days or the fridge for 3-4 days. I recommend warming it up in the microwave before eating!
