To make the pancake batter add all the ingredients onto a blender and blend until smooth. Add a few tbsp of mixture to the pan and cook each pancake for about 3 minutes per side or until golden
Once the pancakes are cooked add the coconut oil along with banana slices and cinnamon. Cook for 3-4 minutes per side or until golden
Add pancakes to a plate along with the caramelised banana, greek yoghurt and maple syrup
