Caramelised banana pancakes

A delicious caramelised pancake stack for breakfast is always a good idea!

Ingredients

For the pancakes

  • 1/2 cup oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 2 heaped tbsp greek yoghurt
  • 1-2 tbsp maple syrup or sweetener of choice
  • 1 egg

For the caramelised banana

  • 1 banana sliced
  • 1 tbsp coconut oil
  • cinnamon

  • greek yoghurt
  • maple syrup

Instructions

  • To make the pancake batter add all the ingredients onto a blender and blend until smooth. Add a few tbsp of mixture to the pan and cook each pancake for about 3 minutes per side or until golden
  • Once the pancakes are cooked add the coconut oil along with banana slices and cinnamon. Cook for 3-4 minutes per side or until golden
  • Add pancakes to a plate along with the caramelised banana, greek yoghurt and maple syrup
  • Enjoy!
