Chickpea salad

Ready in under 10 minutes, this vibrant and refreshing Chickpea Salad is the perfect plant-based addition to your summer meals!

Ingredients

  • 1 Lebanese cucumber diced
  • 1 can (375g) chickpeas rinsed and drained
  • 1 punnet of cherry tomatoes diced
  • 1/2 a red onion diced
  • 1 avocado diced
  • coriander finely chopped

Dressing

  • A drizzle of olive oil
  • Salt
  • Juice of half a lemon

Instructions

  • Add everything to a salad bowl. 
  • Mix serve and enjoy!

Notes

Optional: I highly recommend adding in some feta!
