Choc chip espresso banana bread

Banana bread truly is taken to the next level with the addition of some chocolate and coffee, I just know you are going to love this delicious loaf!

Ingredients

  • 3 tsp instant coffee
  • 2 tbsp hot water
  • 2 bananas + an extra one for on top - optional
  • 2 eggs
  • 1/3 cup maple syrup
  • 1/4 cup melted butter
  • 3/4 cup almond milk
  • 2 cups self raising flour
  • 1/2 cup dark chocolate chips

Instructions

  • Preheat oven to 180°c (fan forced) and line a loaf tin.
  • Combine instant coffee and hot water and set aside to cool. 
    In a bowl mash banana. Add in eggs, maple syrup, butter, almond milk and coffee and combine. Mix in the flour and fold in chocolate chips.
  • Add mixture into the lined loaf tin. If you're using, slice your extra banana long ways and place on top of the loaf. Bake for 50-55 minutes or until cooked.
    Let cool slice up and enjoy!

Notes

Store in the fridge for 3-4 days
It's also freezer friendly!
