Preheat oven to 180°c (fan forced) and line a loaf tin.
Combine instant coffee and hot water and set aside to cool. In a bowl mash banana. Add in eggs, maple syrup, butter, almond milk and coffee and combine. Mix in the flour and fold in chocolate chips.
Add mixture into the lined loaf tin. If you're using, slice your extra banana long ways and place on top of the loaf. Bake for 50-55 minutes or until cooked.Let cool slice up and enjoy!
