Choc Chip Oatmeal Bars

Ingredients

  • 1 1/3 cups all purpose flour
  • 1 cup rolled oats
  • 3/4 cup natural nut butter I usually use peanut butter or almond butter
  • 1/2 cup maple syrup
  • 2 eggs
  • 1/2 cup almond milk or milk of choice
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup chocolate chips
  • pinch of flaky sea salt

Instructions

  • Preheat your oven to 180°C and line a 9x9 baking pan
  • In a large bowl, combine the flour, rolled oats, salt, and baking powder. Add in the nut butter, maple syrup, eggs, milk, vanilla extract, and mix until fully combined.
  • Fold in the chocolate chips and pour the batter into the prepared baking pan, spreading it out evenly with a spatula.
  • Bake for about 12 minutes, or until the edges are golden and a toothpick inserted into the centre comes out clean.
  • Let cool slightly, then sprinkle with flaky sea salt and cut into 9 bars.

Notes

Store in an airtight container, they last about 3 days. 
You can also freeze them.
