Chocolate protein muffins

These delicious Chocolate Protein Muffins are the ultimate snack. With simple ingredients and minimal prep time, they are perfect as an afternoon pick me up or a little something sweet after dinner!

Ingredients

  • 2 eggs
  • 1/4 cup olive oil or melted coconut oil
  • 1/2 cup maple syrup or liquid sweetener of choice
  • 1 cup almond milk or milk of choice
  • 1 cup self raising flour
  • 1 tsp baking powder
  • 1/3 cup cacao powder
  • 1/2 cup chocolate protein powder I used True Protein
  • 1/2 cup dark choc chips

Instructions

  • Preheat oven to 180°c and line a muffin tin - if using a silicone muffin mould you can skip that step.
  • Into a bowl add the eggs, oil, maple syrup, almond milk and combine.
  • Add the flour, baking powder, cacao, protein powder and mix. Fold in the chocolate chips.
  • Divide mixture across the muffin tin and bake for 18-20 minutes or until cooked.
  • Let cool and enjoy - I recommend warming them up in the microwave for a couple of seconds before eating!

Notes

Store in an airtight container - they last about 3-4 days. 
You can also freeze them!
