Ingredients
500g
corn cobs
2
avocados
diced
1
red onion
diced
1
punnet
cherry tomatoes
diced
coriander
finely chopped
Dressing
juice of 1 lime
1 1/2
tbsp
olive oil
pinch of flaky sea salt
Instructions
Add a good drizzle of olive oil to a pan and heat to medium high. Add the corn cobs and cook until golden on each side.
Cut the corn off the cob and add to a large salad bowl along with all the other ingredients.
Mix, serve and enjoy!
