Cottage cheese pancakes

Ingredients

  • 200g cottage cheese
  • 2 eggs
  • 1/3 cup maple syrup
  • 2 tbsp milk of choice
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • Pinch of salt
  • 1 cup self raising flour

Instructions

  • Add all ingredients into a blender and blend until smooth.
  • Heat a non stick pan to medium. Cook the pancakes for 3 minutes per side or until bubbles start to appear.
  • Plate up with your favourite toppings and enjoy!
