Cook pasta as per directions. Place 1tbsp of oil from sun dried tomatoes in a pan and heat to medium. Add in chicken, spices, mix and cook.
Once cooked, remove chicken from the pan and add onion, garlic, sun dried tomatoes and sauté. Add in cream, chicken stock and mix then add the baby spinach and Parmesan cheese.
Once the baby spinach begins to wilt add in the chicken, cooked pasta and gently mix until all combined.
Serve in bowls with fresh herbs and Parmesan cheese. Enjoy!
