Creamy Vegan Pumpkin Pasta

If you’re a pasta lover you need to try this creamy vegan pumpkin pasta. For this recipe you’ll only need a few simple ingredients and it’s so quick to make!

Ingredients

  • 500g pumpkin puree *see notes on how to make this
  • 350g pasta of choice uncooked
  • 400 ml coconut cream
  • 1 tbsp minced garlic
  • 2 tsp paprika
  • salt/pepper

Instructions

  • Cook pasta as per directions (reserve some pasta water as you can add it to the sauce if it's too thick)
  • In a saucepan, combine the pumpkin puree, coconut cream, garlic, paprika, salt and pepper.
  • Add in the cooked pasta and mix
  • Reduce the heat and let simmer for approximately 15 minutes, or until the sauce has thickened
  • Serve in bowls and enjoy!

Notes

To make the pumpkin puree:
  • cut up your pumpkin, removing the skin and steam for 15 minutes, or until the pumpkin is soft
  • use a handheld mix or blender to form a puree
