Using a rolling pin, roll out the croissant until it is as flat as possible.
Heat a pan to medium and add the butter. Once the butter has melted, add in the croissant. Drizzle the maple syrup and brown sugar on top and let cook for about 3 minutes per side or until golden.
Add to a plate and allow it cool for 5 minutes to harden. Top with greek yoghurt, berries, coconut and maple syrup (or toppings of choice)Enjoy!
