Egg Salad Sandwich

You can never go wrong with an egg salad sandwich. It's so easy to make, packed with protein and comes together in minutes!

Ingredients

  • 2 hard boiled eggs
  • 1/2 an avocado
  • 1 tbsp greek yoghurt
  • 1 tsp dijon mustard
  • 1 tsp minced garlic
  • dash of lemon juice
  • fresh herbs
  • salt and pepper
  • 2 slices of bread toasted
  • lettuce

Instructions

  • In a bowl add the boiled eggs, avocado, greek yoghurt, dijon mustard, minced garlic, lemon juice, fresh herbs salt, pepper and mash together.
  • Toast your bread and add the egg salad along with some lettuce, slice and enjoy!
