Preheat oven to 180°c (fan forced) and line an 8x8 baking tray.
In a bowl add the eggs, applesauce, olive oil, maple syrup, espresso and mix until combined.
Mix in the flour, cacao powder, baking powder, baking soda and fold in the dark chocolate chips.
Transfer mixture to the lined baking tray and bake for 15-18 minutes or until cooked.
Let cool, slice up and enjoy!
