Healthier blueberry muffins

A delicious and easy snack recipe that you have to try! They're great if you need something to take with you on the go or as a tasty school/work snack.

Ingredients

  • 1 cup almond milk (or milk of choice)
  • 1 tsp vanilla extract
  • 2 eggs
  • 1/3 cup maple syrup (or liquid sweetener of choice)
  • 1 & 1/4 cup self raising flour
  • 1 tsp baking powder
  • 1 cup blueberries (fresh or frozen)

Instructions

  • Preheat oven to 180°c (fan forced)
  • Combine the milk, vanilla extract, eggs and maple syrup in a bowl. Mix in the flour and baking powder and fold in blueberries.
  • Transfer mixture to a silicone muffin mould (or lined muffin pan) and bake for 25-30 minutes or until cooked 
  • Let cool and enjoy!

Notes

Store in the cupboard for about 2-3 days or the fridge for about 4-5 days.
They can also be frozen!
