Ingredients

  • 1 can (420g) lentils rinsed and drained
  • 1 cup frozen edamame beans defrosted
  • 1 punnet cherry tomatoes diced
  • 1/2 a large cucumber diced
  • 1 small red onion finely diced
  • coriander finely chopped
  • 100g feta crumbled

Dressing

  • 1 1/2 tbsp olive oil
  • juice of 1 lemon
  • salt
  • pepper

Instructions

  • Add all ingredients into a large salad bowl.
  • Mix, serve and enjoy!
