Preheat your oven to 180ºc (fan forced) and line an 8x8 baking pan.
In a bowl combine eggs, applesauce, maple syrup and olive oil. Mix in flour, cacao powder, baking powder and baking soda. Roughly chop up your mini eggs and fold into the mixture along with the chocolate chips.
Place batter into the lined baking pan and bake for 18 minutes or until cooked.
Let cool, slice up and enjoy!
