Peanut Edamame Salad

The perfect flavour filled side dish, this peanut edamame salad will be your new salad obsession!

Ingredients

  • 1 head of cos lettuce shredded
  • 1 cucumber diced
  • 1 red capsicum diced
  • 200g frozen edamame beans thawed
  • shallots sliced
  • coriander finely chopped
  • 1/2 cup flaked almonds

peanut sauce

  • 1/3 cup natural peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp minced garlic
  • 1 tbsp lemon juice
  • 3-4 tbsp hot water add enough to get too your desired consistency

Instructions

  • In a small bowl combine peanut butter, soy sauce, minced garlic, honey, lemon juice and hot water
  • In a large salad bowl add the lettuce, cucumber, capsicum, edamame beans, shallots, coriander, peanut dressing, flaked almonds and mix until all combined.
  • Serve in bowls and enjoy!
