Peanut Noodle Stir Fry

This peanut noodle stir fry is a great weeknight dinner idea. It's so quick and easy to make and most importantly, incredibly delicious!!

Servings: 4

Ingredients

  • 450g firm tofu
  • 2c mixed frozen veggies
  • 450g Hokkien noodles
  • peanuts and fresh herbs to serve

Peanut sauce

  • 1/2 cup natural peanut butter
  • 1 tsp minced garlic
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tsp lemon juice
  • 2-3 tbsp hot water add enough to get to your desired consistency

Instructions

  • Slice up tofu and cook in a pan. Once cooked remove from the pan and add the veggies. Cook noodles as per directions. 
  • Mix together peanut butter, garlic, soy sauce, honey, lemon juice and water to make the sauce.  
  • Once veggies are cooked add in the tofu, noodles, peanut sauce and mix until all combined.
  • Serve in bowls with crushed peanuts and fresh herbs.
