Slice up tofu and cook in a pan. Once cooked remove from the pan and add the veggies. Cook noodles as per directions.
Mix together peanut butter, garlic, soy sauce, honey, lemon juice and water to make the sauce.
Once veggies are cooked add in the tofu, noodles, peanut sauce and mix until all combined.
Serve in bowls with crushed peanuts and fresh herbs.Enjoy!!
