2250gmicrowavable brown rice packets or cook your own rice if preferred
Peanut sauce
1/3cupnatural peanut butter
3tbspsoy sauce
2tbsp honey
2tsp minced garlic
1tbsp lemon juice
3-4tbsphot water add enough to get too your desired consistency
Instructions
Cut your tofu up into cubes and heat a pan to medium. Add the tofu and cook until golden.
While the tofu is cooking, in a small bowl combine all ingredients for the peanut dressing. Add enough water to get to your desired consistency - I usually do a few tbsp.
Prepare your rice and defrost frozen edamame in the microwave. Grate carrot, slice cherry tomatoes and finely slice the fresh herbs and shallots.
In bowls add the veggies, rice, tofu and a good drizzle of the peanut dressing. Enjoy!!
Notes
The best thing about this meal is besides the peanut sauce the quantities are really flexible!! You can't go wrong so feel free to do as much as you think will keep you satisfied!
