Peanut Tofu Bowls

Ingredients

  • 450g firm tofu
  • baby spinach
  • cherry tomatoes sliced
  • 2 carrots grated
  • 200g frozen edamame beans defrosted
  • shallots finely sliced
  • fresh herbs finely diced
  • 2 250g microwavable brown rice packets or cook your own rice if preferred

Peanut sauce

  • 1/3 cup natural peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 2 tsp minced garlic
  • 1 tbsp lemon juice
  • 3-4 tbsp hot water add enough to get too your desired consistency

Instructions

  • Cut your tofu up into cubes and heat a pan to medium. Add the tofu and cook until golden.
  • While the tofu is cooking, in a small bowl combine all ingredients for the peanut dressing. Add enough water to get to your desired consistency - I usually do a few tbsp.
  • Prepare your rice and defrost frozen edamame in the microwave. Grate carrot, slice cherry tomatoes and finely slice the fresh herbs and shallots.  
  • In bowls add the veggies, rice, tofu and a good drizzle of the peanut dressing.

Notes

The best thing about this meal is besides the peanut sauce the quantities are really flexible!! You can't go wrong so feel free to do as much as you think will keep you satisfied!
