In a bowl combine the self raising flour, protein powder, baking powder and cinnamon. Add in the egg, maple syrup, almond milk and mix until combined.
Heat a nonstick pan to medium and add the mixture to the pan - it makes 3 medium sized pancakes.
Cook for 3-4 minutes per side or until golden. You'll know they are ready to flip when bubbles start to appear on the surface.
Once cooked stack the pancakes, add toppings and enjoy!
