Protein pancakes

This delicious stack of protein pancakes is a wholesome and tasty breakfast idea that comes together in one bowl!

Ingredients

  • 1/3 cup self raising flour
  • 1 heaped tbsp protein powder I used the vanilla plant protein from True Protein
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 egg
  • 1 tbsp maple syrup or liquid sweetener of choice
  • 1/3 cup almond milk or milk of choice

toppings

  • banana
  • passionfruit
  • maple syrup

Instructions

  • In a bowl combine the self raising flour, protein powder, baking powder and cinnamon. Add in the egg, maple syrup, almond milk and mix until combined.
  • Heat a nonstick pan to medium and add the mixture to the pan - it makes 3 medium sized pancakes.
  • Cook for 3-4 minutes per side or until golden. You'll know they are ready to flip when bubbles start to appear on the surface.
  •  Once cooked stack the pancakes, add toppings and enjoy!
