Raspberry White Chocolate Loaf

You cannot go wrong with this raspberry white chocolate loaf, it's a fabulous dessert or snack and perfect for anytime year!

Ingredients

  • 3/4 cup applesauce or mashed banana
  • 1/3 cup maple syrup or liquid sweetener of choice
  • 1/4 cup melted butter or melted coconut oil/olive oil
  • 2 eggs
  • 3/4 cup almond milk or milk of choice
  • 1 tsp vanilla extract
  • 2 cups self raising flour
  • 3/4 cup white chocolate chips or chunks
  • 1 cup fresh or frozen raspberries If using frozen toss them in 1/2tbsp plain flour, this prevents them from sinking.

Instructions

  • Preheat oven to 180°c (fan forced) and line a loaf tin. 
  • In a bowl combine applesauce, maple syrup, melted butter, eggs, almond milk and vanilla extract. Mix in the self raising flour and then gently fold in the white chocolate and raspberries. 
  • Transfer mixture to the lined loaf tin and bake for 40-45 minutes or until cooked. 
  • Let cool, slice up and enjoy!

Notes

Store in the fridge for about 3-4 days. 
You can also freeze it.
