This roasted potato salad is a perfect side dish that's both simple and easy to prepare, featuring crispy roasted potatoes tossed in a creamy herby dressing.

Ingredients
1kgbaby white potatoes chopped
drizzle of olive oil
pinch of salt
Dressing
1lebanese cucumber deseeded & finely diced
1/4cupchives finely chopped
1/4cupdillfinely chopped
1/4cupparsely finely chopped
1/4cupgreek yoghurt
1/2cupkewpie mayo
1tspdijon mustard
1tspseeded mustard
1tspminced garlic
juice of 1/2 a lemon
salt/pepper
Instructions
Preheat oven to 200°c and line a baking tray. Chop up the potatoes and add to the baking tray. Drizzle on olive oil and season with salt. Mix and bake for 40 minutes of until golden and crispy.
While the potatoes are cooking, add all ingredients for the dressing into a large salad bowl and mix.
Once potatoes are cooked, let cool slightly then add them to the bowl. Mix and enjoy!
