Salted Caramel Oatmeal Cookies

Ingredients

salted caramel chocolate
roughly chopped
Instructions
Preheat the oven to 180°c and line a baking tray with baking paper.
In a bowl, mix together the egg, brown sugar and melted butter until combined.
Stir in the rolled oats, plain flour, salt and bicarbonate of soda until a dough forms.
Gently fold in the salted caramel chocolate chunks.
Scoop heaped tablespoons of dough onto the prepared tray and press down slightly. Space them a few centimetres apart as they will spread slightly.
Bake for 10–12 minutes or until the edges are golden - they’ll firm up more as they cool. Top with a pinch of salt.
Let cool and enjoy! Store in an airtight container, they last 4-5 days.
Notes
They are best served warm so pop them in the microwave for a couple of seconds before eating so the chocolate melts!
