Sheet pan pancakes

Sheet Pan Pancakes are the perfect breakfast solution for busy mornings! They are incredibly easy to make, requiring only simple ingredients you probably already have in your kitchen.

Ingredients

  • 2 cups flour
  • 2 tsp cinnamon
  • 2 eggs
  • 1/2 cup maple syrup or sweetener of choice
  • 1 cup almond milk or milk of choice
  • 1 1/2 cups mixed frozen berries tossed in 2tsp flour - this will prevent them from sinking in the batter

Instructions

  • Preheat oven to 180°c and line a 19.5cm x 28.5cm* baking tray.
  • To a bowl add the flour, cinnamon and mix. Add in the eggs, maple syrup, almond milk and mix until combined.
  • Toss the berries in some flour and then fold into the mixture.
  • Transfer the batter into the baking tray and bake for 20 minutes or until golden brown.
  • Let cool and slice into 6 pieces.

Notes

*You can use a slighly larger baking dish if you want them thinner!
I love to serve these with greek yoghurt and a drizzle of maple syrup. 
They are also great to store in the freezer for when you need!
