Sticky Date Banana Bread

A fluffy banana bread loaf with soft, gooey dates served with an incredible 3 ingredient caramel sauce...does dessert get much better?!?!?

Ingredients

  • 1 cup pitted dates
  • 1/2 tsp baking soda
  • 1 cup boiling water
  • 2 bananas mashed
  • 1/3 cup olive oil or melted coconut oil/butter
  • 1/3 cup maple syrup or liquid sweetener of choice
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups self raising flour
  • pinch of salt

Caramel sauce (optional)

  • 1 cup canned coconut milk
  • 1/3 cup maple syrup or honey
  • 2 tbsp brown sugar or coconut sugar

Instructions

  • In a heat proof bowl add the dates and baking soda. Cover with boiling water and leave to sit for 10 minutes, stirring occasionally.
  • Preheat oven to 180°c (fan forced) and line a loaf tin (21.5cmx13cmx12cm)
  • In a mixing bowl add the mashed bananas, olive oil, maple syrup, vanilla, egg and date mixture. Mix until combined.
  • Add in the flour, salt and mix until combined. Transfer mixture to the loaf tin and bake for 45 minutes or until cooked.
  • While the loaf is baking add the coconut milk, honey and brown sugar to a sauce pan. Mix and bring to the boil. Let simmer 15 minutes, stirring frequently.
  • Once the banana bread has cooked, let cool and slice.
    Serve warm with the caramel sauce and enjoy!

Store in the fridge for 4-5 days
