In a heat proof bowl add the dates and baking soda. Cover with boiling water and leave to sit for 10 minutes, stirring occasionally.
Preheat oven to 180°c (fan forced) and line a loaf tin (21.5cmx13cmx12cm)
In a mixing bowl add the mashed bananas, olive oil, maple syrup, vanilla, egg and date mixture. Mix until combined.
Add in the flour, salt and mix until combined. Transfer mixture to the loaf tin and bake for 45 minutes or until cooked.
While the loaf is baking add the coconut milk, honey and brown sugar to a sauce pan. Mix and bring to the boil. Let simmer 15 minutes, stirring frequently.
Once the banana bread has cooked, let cool and slice. Serve warm with the caramel sauce and enjoy!
