Vegemite scroll avocado toast

This Vegemite scroll avocado toast takes the classic avocado toast to the next level!

Ingredients

  • 1 Vegemite scroll toasted
  • Vegemite
  • avocado
  • 2 poached eggs
  • feta
  • fresh herbs
  • salt/pepper

Instructions

  • To make poached eggs, add some water into a saucepan (fill it a few cm from the top) with a dash of vinegar, bring to the boil and then gently place in the egg. Let the egg simmer for 3 minutes and then scoop out and place on some paper towel to get off any excess water.
  • Slice the Vegemite scroll in half and toast. Once the Vegemite scroll is toasted, add on Vegemite, avocado, poached eggs, feta, herbs and salt/pepper.
