Well you’re in luck because I have the perfect dessert for you…These 4 ingredient no bake rice cake bars are one of my most popular recipes and for good reason. They’re so easy and absolutely DELICIOUS!
My favourite recipes to share are ones that are simple and don’t require too much effort! This slice ticks all the boxes and the best part is it can be tweaked to suit your dietary needs. It is gluten free and can easily be made nut free, dairy free and vegan!
Ingredients needed:
- rice cakes
- peanut butter
- honey
- dark chocolate chips (melted)
Method:
- In a bowl add the rice cakes and use your hands to crush them up. Add in the peanut butter, honey and mix until all combined.
- Line a container (17cm x 13cm), add the mixture and use a spoon to press it down so it’s all even.
- Spread the melted chocolate on top and place slice in the freezer for 1 hour to set.
- Slice up and store in the fridge – it lasts around a week
Recipe substitutions/alterations:
- You can use any nut butter of your choice.
- You can use any chocolate of your choice – salted caramel is one of my favourites to use!
- To make NUT FREE: Substitute the peanut butter for melted biscoff spread
- To make DAIRY FREE/VEGAN: Use a vegan sweetener (i.e maple syrup, agave syrup) and use a vegan chocolate.
- Instead of RICE CAKES: You can use corn thins.

- 6 rice cakes or corn thins
- 1/2 cup natural peanut butter or nut butter of choice
- 1/3 cup honey or liquid sweetener of choice
- 1/2 cup dark chocolate chips melted – or chocolate of choice
Instructions
- In a bowl add the rice cakes and use your hands to crush them up. Add in the peanut butter, honey and mix until all combined.
- Line a container (17cm x 13cm), add the mixture and use a spoon to press it down so it's all even.
- Spread the melted chocolate on top (optional – add some flaky sea salt) and place the slice in the freezer for 1 hour to set.
- Slice up and store in the fridge – it lasts around a week
