4 ingredient Biscoff pastries 🌟

Such a tasty snack and so simple to make!

Ingredients:
2 sheets of puff pastry, partially thawed
Biscoff spread
Oil spray
Biscoff biscuits

Method:
1. Spread Biscoff evenly on one sheet of puff pastry. Place the second sheet of pastry on top, pressing down lightly.
2. Slice into strips (about 2–3cm wide).
3. Twist each strip a few times and lay them on a baking tray.
4. Lightly spray with oil. Bake at 180°c for
12 - 15 minutes or until golden.
5. Drizzle with biscoff spread and crushed biscoff biscuits.

Enjoy!

Big Mac loaded potato gems 🍔

Absolutely obsessed with these!! Such a tasty dinner 😍

Ingredients:
Potato gems
Beef mince
Seasonings of choice
Shredded cheese

Sauce (this is just an estimate as I didn’t measure anything!)
1/4 cup kewpie mayo
1 1/2 tbsp tomato sauce
1tbsp chopped pickles
1tbsp chopped brown onion
1tsp Dijon mustard
Splash of pickle juice

Toppings:
Shredded lettuce
Chopped pickles
Chopped brown onion

Method:
1. Cook potato gems in the oven or air fryer at 200°C for 15-20mins until golden and crispy.
2. Cook beef mince in a pan with seasonings.
3. Mix sauce ingredients in a bowl.
4. Top cooked potato gems with beef mince and shredded cheese. Place back into the oven until cheese melts.
5. Once melted add lettuce, pickles, onion and sauce

what I meal prepped for dinners this week!

Avocado and corn salsa with honey mustard chicken and rice 🥑

Avo and corn salsa:
250g corn
1 avocado, diced
1/2 red onion, diced
1/2 a punnet cherry tomatoes, diced
coriander, finely chopped

Dressing:
juice of 1 lime
Drizzle of olive oil
pinch of flaky sea salt

Chicken:
2 chicken breasts
2tbsp honey
2tbsp dijon mustard
1tbsp olive oil
Minced garlic
Salt and pepper

— let marinate for a couple of hours then pan fry or bake.

Serve with rice and top with feta.

Enjoy!

Biscoff swirl baked oats 🤎✨

Ingredients (serves 2)
1 cup oats
1 egg
1 banana
1/3 cup vanilla protein powder
1/2 cup milk of choice
1tsp baking powder
2tbsp sweetener of choice
2tbsp biscoff + extra for on top, melted
2 Biscoff biscuits (optional)

Method:
Blend up everything except Biscoff and pour into glass bowls.
Drizzle on Biscoff and swirl on top.
Bake for 15 minutes at 180°c or until cooked.
Drizzle on more biscoff spread and add a crush biscoff biscuit.

Enjoy!

Dark chocolate sea salt bites 🍫✨

Ingredients (makes 24)
1 cup pitted dates
1 cup dried apricots
1 cup shredded coconut
1/2 cup @trueprotein WPC natural flavoured protein (or use vanilla)
2 heaped tablespoons natural peanut butter
120g dark chocolate
Flaky sea salt

Method:
1. Soak dates in boiling water for 20 minutes (reserve some of the water used to soak them).
2. Place dates, apricots, coconut, protein powder, peanut butter and a dash of the date water in a food processor and blend until combined. (If it’s struggling to blend add a little more water)
3. Place mixture into small silicone moulds
4. Top each one with melted dark chocolate and flaky sea salt.
5. Leave in the freezer for 1 hour to set.
6. Store in the fridge
