This zesty lemon, coconut & white chocolate slice is an incredibly delicious and easy recipe. I’m not the biggest fan of coconut or white chocolate HOWEVER this flavour combo just works so well and I can’t believe how much I love this slice! It’s also egg free and can easily be made dairy free and vegan if required.
Ingredients needed:
- applesauce
- maple syrup
- melted butter – use dairy free if needed
- almond milk
- lemon juice
- all purpose flour
- desiccated coconut
- baking powder
- baking soda
- white chocolate chips – use DF/V if required
How to make lemon, coconut & white chocolate slice:
Preheat oven to 180°c (fan forced) and line an 8×8 baking pan.
In a bowl combine applesauce, maple syrup, butter, almond milk and lemon juice. Mix in flour, coconut, baking powder and baking soda.
Fold in white chocolate chips and transfer mixture to the lined baking pan. Bake for 25 minutes or until cooked.
Let cool, slice up and enjoy!
Ingredient substitutions:
- Instead of applesauce: substitute for 1 mashed banana
- Instead of maple syrup: you can use any liquid sweetener of your choice
- Instead of butter: you can use melted coconut oil
- Instead of almond milk: you can use any milk of your choice
