This fresh and vibrant black bean and avocado salad is a delicious and nutritious vegan side salad perfect for summer! It contains a colourful mix of black beans, avocado, cherry tomatoes, red onion, coriander and is drizzled with a simple zesty lime dressing. The best part is it’s super low effort and is ready in under 10 minutes!
Ingredients needed:
- Canned black beans
- Cherry tomatoes
- Red onion
- Avocados
- Coriander
Dressing:
- Lime juice
- Salt
- Olive oil
Simply add all the ingredients into a salad bowl. Use salad servers to give it a good mix, then serve and enjoy!
As well as being a great side dish, it also makes for the perfect snack to have with corn chips!
