Green goddess salad 🥬🥒🌿

Given how much I love salads I don’t know why it’s taken me so long to make this!!
So delish 😍😍

Ingredients:
1/2 a head of cabbage, finely chopped
2 cucumbers, diced
3 spring onions, chopped

Dressing:
1 handful of baby spinach
1 cup fresh basil
2 cloves of garlic
1 shallot
Juice of 2 lemons
1/4 cup cashews
1/4 cup olive oil
1/3 cup Parmesan cheese
Salt
Pepper

Add all ingredients for the dressing into a blender. Blend until smooth.
Add salad ingredients into a salad bowl. Add the dressing, mix, serve with corn chips and enjoy!

An easy and tasty lunch idea !!!

Ingredients:
2 boiled eggs
Kewpie Mayo
1/4 of an avocado
Spring onion
1tsp Dijon mustard
Dash of lemon juice
Salt
Pepper
A pinch of curry powder
Ice berg lettuce

Mash everything together, add onto a toasted bagel and enjoy!

Peanut butter chocolate crackles 🍫✨

Ingredients - makes 12
1 cup choc chips
1/3 cup peanut butter + extra to drizzle on top (optional)
2tbsp coconut oil
2 1/2 cups rice puffs

Method:
In a saucepan add the chocolate, peanut butter, coconut oil and melt.

Once melted take of the heat.

Add the the rice puffs and mix until combined.

Place into a muffin tin and leave in the freezer for 1 hour or until set.

Drizzle on extra peanut butter if you wish and enjoy!!

Biscoff rocky road 🤤🤎✨

You can never go wrong with rocky road 😍

Ingredients:
Chocolate, melted
Biscoff biscuits
Biscoff cream biscuits
Marshmallows
Lollies of choice (we used snakes)
Biscoff spread, melted — to drizzle on top

Leave to set in the freezer for about an hour.
Slice up and store in the fridge.

Enjoy!!

Caesar pasta salad 🥚🥬🥓🤤

You NEED this salad in your life !!!

Caesar salads have always been one of my favourites and if they are yours too I just know you’ll absolutely love this salad 🤩

ingredients:
1 head of cos lettuce
2 cups cooked penne pasta
4 slices of bacon, pan fried
4 boiled eggs
1/2 cup parmesan cheese
Croutons — recipe below

Dressing:
2 heaped tbsp greek yoghurt
1tsp dijon mustard
1tsp minced garlic
juice of half a lemon
1/4 cup grated parmesan cheese
salt
pepper

Crouton recipe:
Cut up 3 slices of bread into bite sized pieces. Drizzle with olive oil and season.
Air fry at 180°c for 8 minutes or until golden — you can also bake them but they made need a little longer!

Add everything into a salad bowl.
Mix serve and enjoy!
