McChicken smash flatbreads 🤤

Such an easy, low effort weeknight dinner idea!!

Ingredients:
Flatbread
Chicken mince
Garlic powder
Onion powder
Salt
Lettuce

Sauce:
1 tbsp kewpie mayo
1tsp Dijon mustard

Method:
Spread mince onto the flat bread and season.
Fry in a pan until golden on both sides and the chicken is cooked.
Add the sauce and lettuce.
Enjoy!

Ingredients:
Pasta of choice
Rocket
Cherry tomatoes
Cherry bocconcini
Basil pesto

Cook pasta as per directions.
Add everything into a large salad bowl.
Mix, serve and enjoy!

Biscoff tiramisu 😍

I am such a big tiramisu fan and if you are too you’ve got to try this!

Recipe:
480g thickened cream
2tbsp sugar
225g mascarpone
2 heaped tbsp biscoff (melted)
48 biscoff biscuits + plus a couple extra to add on top
3/4 cup espresso

Method:
1. Whip together the cream and sugar. Fold in mascarpone and biscoff (make sure you don’t over mix)
2. Dip 2 biscuits at a time in the espresso and add to a dish. Once the base is covered add a layer of the biscoff mixture. Repeat this.
3. Drizzle with some extra melted biscoff and add crushed biscoff cookies.
4. Leave in the fridge for 4 hours or overnight.
5. Enjoy!

3 ingredient Oreo cheesecake bites 🍫

These are such a yummy little no bake dessert and are SO easy to make !!!

Ingredients:
180g oreos
125g cream cheese
120g chocolate, melted

Method:
1. Crush up the oreos and add to a bowl with the cream cheese. Mix until all combined.
2. Roll the mixture into 8 balls and leave in the freezer for 20 minutes.
3. Melt the chocolate and coat each ball. Sprinkle on some extra crushed up oreos (optional)
4. Leave in the freezer for 1 hour to set.

Enjoy!
Store in the fridge.

Choc chip espresso banana bread 🍌☕️

Ingredients:
Double shot of espresso
2 bananas, mashed (+ 1 for on top - optional)
2 eggs
1/3 cup maple syrup
1/4 cup melted butter or coconut oil
3/4 cup almond milk/milk of choice
2 cups self raising flour
1/2 cup choc chips

Method:
In a bowl combine all the wet ingredients. Mix in the flour and fold in chocolate. Add in a lined loaf tin, add extra banana on top if using and bake at 180°c for 45-50 minutes or until cooked.

Slice up and enjoy 😊

Peanut butter rice cake bars 🍫

Such an easy no bake snack!!

Ingredients:
5 rice cakes
1/3 cup @trueprotein vanilla protein powder
1/2 cup natural peanut butter
1/3 cup maple syrup
1/2 cup dark chocolate, melted

Method:
1. Crush up the rice cake in a bowl and add the protein powder, peanut butter and maple syrup. Mix until combined
2. Add mixture to a lined dish and press down firmly
3. Spread melted chocolate on top. Leave in the fridge for a few hours to set.
4. Slice up and enjoy!

Big Mac loaded potato gems 🍔

Absolutely obsessed with these!! Such a tasty dinner 😍

Ingredients:
Potato gems
Beef mince
Seasonings of choice
Shredded cheese

Sauce (this is just an estimate as I didn’t measure anything!)
1/4 cup kewpie mayo
1 1/2 tbsp tomato sauce
1tbsp chopped pickles
1tbsp chopped brown onion
1tsp Dijon mustard
Splash of pickle juice

Toppings:
Shredded lettuce
Chopped pickles
Chopped brown onion

Method:
1. Cook potato gems in the oven or air fryer at 200°C for 15-20mins until golden and crispy.
2. Cook beef mince in a pan with seasonings.
3. Mix sauce ingredients in a bowl.
4. Top cooked potato gems with beef mince and shredded cheese. Place back into the oven until cheese melts.
5. Once melted add lettuce, pickles, onion and sauce

Enjoy!
