This easy and delicious chicken fajita recipe will be your new go-to weeknight dinner recipe!
My least favourite meal to cook is dinner, I don’t know what it is but I just can never be bothered making anything 😅

This year I want to experiment with some new meals and just enjoy making dinner, but obviously still keep it relatively simple because let’s be honest quick and easy meals are the best!!
Ingredients needed to make Chicken Fajitas
- olive oil
- brown onion
- red onion
- capsicums
- chicken breasts
- fajita seasoning
- tortillas
- avocados
- lemon juice
- pinch of salt
- greek yoghurt + coriander to serve
For the fajita seasoning I just get one from Coles or Woolworths, there isn’t a particular one I use!

Chicken fajitas
Ingredients
- 1 tbsp olive oil
- 1 brown onion sliced
- 1 red onion sliced
- 3 capsicums sliced
- 2 chicken breasts diced
- 1 packet fajita seasoning – I get this from Coles or Woolworths use half for the chicken and half for vegetables
- 8 tortillas
- 2 avocados
- Dash of lemon juice
- pinch of salt
- greek yoghurt + coriander to serve
Instructions
- Heat your pan and add olive oil. Add in diced chicken breast and 1/2 a packet of fajita seasoning. Mix so all the chicken is coated in the spice mix and let cook, stirring occasionally.
- Slice up onion and capsicum. Once chicken is cooked remove it from the pan and add in the vegetables, mince garlic and the rest of the fajita seasoning. Mix and let cook until soft.
- In a bowl mash avocado, lemon juice and salt.
- Heat up tortillas in the microwave then add sautéed vegetables, chicken, avocado mash, greek yoghurt and coriander.
- Enjoy!
