Hi, I’m Kirrily and I’m so happy you’re here! I have a passion for all things health, wellness and fitness and I absolutely LOVE cooking. Most of my recipes are pretty simple and I try to use ingredients you probably already have at home because I believe healthy eating doesn’t have to be difficult or complicated!

day 8: whipped ricotta and tomato dip 🍅

I can’t get enough of this dip!! It’s seriously delicious 🤤

Ingredients

Roasted tomatoes:
250 g cherry tomatoes
2 tbsp olive oil
1 tbsp minced garlic
Salt

Ricotta dip:
375g ricotta
1tbsp honey
Zest/juice of half a lemon
Salt

Top with honey and fresh basil
Serve with toasted bread or crackers

Method:
1. Add the tomatoes into a baking dish along with the olive oil, garlic and seasonings. Mix and bake for 20 minutes at 180°c or until the tomatoes are cooked. Set aside to cool slightly.
2. While the tomatoes are roasting, add the ricotta, honey, lemon and salt to a blender or electric mixer and blend until smooth. Leave in the fridge until the tomatoes have cooled and you are ready to serve.
3. Add the ricotta dip into a bowl. Top with the tomatoes and any of the juices left in the pan. Add on a drizzle of honey and some fresh basil leaves.
4. Serve with toasted bread or crackers.   Enjoy!

Baked Brie bread bowl 🤤 ingredients: 1 sourdough

Baked Brie bread bowl 🤤

ingredients:
1 sourdough cob loaf or regular cob loaf
200 g brie
150 g diced bacon
1 1/2 tbsp honey
thyme
olive oil

method:
1. Preheat oven to 180°c and line a baking tray.
2. Cut the top off the cob loaf and hollow out the centre to the size of the brie.
3. Cut the sides of the bread to create pull apart pieces leaving the bottom intact.
4. Pan fry the bacon until crispy. Cut the top off the brie and add into the bread along with the honey, bacon and thyme.
5. Add the bread to the baking tray along with the top of the sourdough and pieces removed from the centre. Drizzle over some olive oil and add salt and pepper.
6. Bake for 20 minutes or until the cheese has melted and the bread is golden. Serve warm from the oven. Dip pieces of the bread into the brie and enjoy!

day 7: choc mint slice

Such an easy and delicious festive sweet treat 🤩

Ingredients (serves 8)
180g mint slice biscuits
25g butter
125g condensed milk
120g chocolate, melted
Toppings of choice — I did some extra mint slice biscuits and Christmas smarties

Method:
1. Crush up the biscuits and add them into a bowl.
2. ��Add the condensed milk and butter into a microwave safe bowl and microwave for 30 seconds or until butter has melted.
3. ��Add this into the bowl with the biscuits and mix until combined.
4. ��Place into a lined dish - the size I used was 17cm x 13cm
5. Add melted chocolate on top along with any toppings.
6. ��Leave in the freezer for 2 hours to set.

Slice up and enjoy!
Store in the freezer

Day 6: Fairy bread Christmas crack 🧚🏼‍♀️

This flavour of Christmas crack is a 10/10, you need to give it a go !!!!

Ingredients:
6 saladas
125g butter
1 cup brown sugar
180g white chocolate, melted
Sprinkles

Method:
1. Place saladas on a lined baking tray
2. Add brown sugar and butter to a saucepan over medium heat. Stir until butter melts then bring to the boil. Stir continuously until it has thickened then remove from the heat.
3. Spread mixture evenly over the saladas and bake at 180°c for 5 minutes.
4. Spread over the white chocolate and sprinkles. Leave in the freezer to set.
5. Break up and enjoy!

day 5: cranberry and brie smashed potatoes 🥔

These are such a yummy appetiser!! You need to give them a try this festive season 😍

Ingredients:
Baby potatoes
Olive oil
Salt

Brie
Cranberry sauce
Bacon
Chives

Method:
1. Boil potatoes until tender enough to poke a fork into (about 20-25 minutes)
2. Line a baking tray. Smash potatoes with a glass (use baking paper to prevent them from sticking to the glass)
3. Add a good drizzle of olive oil and salt. Bake at 200°c for 35 minutes or until crispy.
4. Once crispy, add Brie on each one and place back into the oven for 2 minutes or until cheese is melted.
5. Top with cranberry sauce, bacon and chives.

Enjoy!

day 4: strawberry and pistachio pastry wreaths 🍓

I’m in love with these, they turned out so pretty !!!

ingredients (makes 8)
2 sheets of puff pastry, partially thawed
pistachio spread
strawberry jam
freeze dried strawberries

method:
1. Spread the pistachio spread on one pastry sheet and the jam on the other. Place the pastry sheets on top of one another, pressing together gently.
2. Slice into strips (about 3cm wide)
3. Twist each strip and roll. Place on a lined baking tray.
4. Brush with olive oil and bake for 15-20 minutes at 180°c or until golden.
5. Drizzle with pistachio spread and sprinkle with freeze dried starwberries
6. Enjoy!

day 3: Peach and avocado salad 🍑🥑

This salad honestly tastes like summer in a bowl!
The perfect side dish to serve on christmas day 😍

ingredients (serves about 5-6)
2 peaches, diced
2 avocados, diced
1/2 a punnet of tomatoes, halved
1 handful of baby spinach, chopped
Fresh basil, chopped
120g feta — I used a marinated one to add some more flavours but you can also just use a plain one if you want!

dressing:
juice of half a lemon
1tbsp minced garlic
1 tsp dijon mustard
1 tsp honey
2 1/2tbsp olive oil
salt
pepper
