Cucumber and Feta Salad
Ingredients
- 2 lebanese cucumbers sliced
- 1 can (420g) chickpeas rinsed and drained
- 2 spring onions finely sliced
- handful of parsely finely chopped
- 200 g feta cheese roughly chopped
Dressing
- juice of 1 lemon
- 2 tbsp olive oil
- salt to taste
