Pesto tofu bowl – An easy and nourishing vegetarian lunch idea!
Salads are definitely a go-to lunch of mine. They’re great because they are so versatile and you really can’t go wrong. Usually I just use a bunch of whatever vegetables are in the fridge with a source of protein, carbs, healthy fats and a delicious dressing of some sort!
I actually used to hate tofu but the last few years I’ve grown to love it! For this lunch I made crispy oven baked tofu and it was so delicious! If you also don’t like tofu but want to give it another go I recommend trying out this!
How to make crispy baked tofu:
- Preheat your oven to 180°c (fan forced) and line a baking tray
- Slice tofu into cubes and add to a bowl
- Add in the spices and cornstarch
- Gently toss together with your hands
- Place tofu onto the baking tray and bake for 30 minutes, turning halfway
Ingredients to make pesto tofu bowl:
Salad:
- Crispy baked tofu
- Baby spinach
- Brown rice: I just use the microwavable packets for convenience.
- cucumber
- avocado
- shallots
- coriander
Salad dressing:
- basil pesto
- greek yoghurt
- salt/pepper
Quantities:
The best thing about this meal is the salad quantities are really flexible. You can’t go wrong so feel free to do as much as you think will keep you satisfied!

Pesto Tofu Bowl
Ingredients
Baked tofu
- 150g firm tofu
- 1/2 tbsp olive oil
- 1 tsp cornstarch
- 1 tsp garlic powder
- 1 tsp onion powder
- salt/pepper
Salad
- baby spinach
- cucumber diced
- brown rice I just use a microwavable packet for convenience
- avocado sliced
- shallots finely chopped
- coriander finely chopped
Dressing
- 1 tbsp (heaped) basil pesto
- 2 tbsp greek yoghurt
- salt/pepper
Instructions
- Preheat oven to 180°c (fan forced) and line a baking tray. Slice your tofu into cubes. Add to a bowl with the spices and cornstarch. Gently toss together until the tofu is evenly coated. Add to the lined tray and bake for 30 minutes, turning halfway.
- To make the dressing, in a small bowl combine basil pesto, greek yoghurt and salt/pepper.
- Once tofu is cooked add all ingredients for the salad into a bowl. Add the tofu and dressing. Enjoy!
