Roasted Capsicum Pasta

This roasted capsicum pasta is incredibly delicious and so easy to make!

Ingredients

  • 2 capsicums
  • 1 brown onion diced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • salt/pepper
  • 340g pasta of choice
  • 3/4 cup cooking cream
  • 1/2 cup pasta water add more if needed
  • 2 tbsp tomato paste
  • 1 tbsp minced garlic

To serve

  • Parmesan cheese
  • Fresh herbs

Instructions

  • Preheat oven to 180°c. Cut up capsicum and onion. Add veggies to a lined baking tray with olive oil, paprika, salt, pepper and roast for 30 minutes or until soft.
  • Cook pasta as per directions and save 1/2 a cup of the pasta water for the sauce. 
  • Once veggies are cooked add to a blender with cooking cream, pasta water, tomato paste, minced garlic, salt and pepper. Blend until smooth.
    Add sauce and pasta into a pan and mix until all combined.
  • Add pasta to bowls along with some Parmesan cheese and fresh herbs.
  • Enjoy!

Notes

I recommend serving this with a protein source of your choice - I usually do chicken!
