Preheat oven to 180°c. Cut up capsicum and onion. Add veggies to a lined baking tray with olive oil, paprika, salt, pepper and roast for 30 minutes or until soft.
Cook pasta as per directions and save 1/2 a cup of the pasta water for the sauce.
Once veggies are cooked add to a blender with cooking cream, pasta water, tomato paste, minced garlic, salt and pepper. Blend until smooth. Add sauce and pasta into a pan and mix until all combined.
Add pasta to bowls along with some Parmesan cheese and fresh herbs.

I recommend serving this with a protein source of your choice - I usually do chicken!
