Ingredients to make Roasted Capsicum Pasta
- Capsicums
- Brown onion
- Olive oil
- Paprika
- Salt/pepper
- Cooking cream
- Tomato paste
- Minced garlic
- Pasta water
- Pasta of choice
- Parmesan cheese
- Fresh herbs
How to make Roasted Capsicum Pasta
Preheat oven to 180°c. Cut up capsicum and onion. Add veggies to a lined baking tray with olive oil, paprika, salt/pepper and roast for 30 minutes or until soft.
Cook pasta as per directions and save 1/2c of the pasta water for the sauce
Once veggies are cooked add to a blender with cooking cream, pasta water, tomato paste, minced garlic and salt/pepper. Blend until smooth. Add sauce and pasta into a pan and mix until all combined
Serve pasta in bowls along with some Parmesan cheese and fresh herbs.
