This Roasted Capsicum Pasta is a simple and easy meal idea that’s perfect for any night of the week!
This vibrant dish features roasted capsicum blended into a deliciously creamy sauce. With minimal ingredients and straightforward preparation, this pasta is sure to be a new family favourite!
Not only is this recipe packed with flavour, it’s also versatile and can be easily tweaked to suit your preferences. Add in a protein source of your choice, like some grilled chicken, or mix in a handful of baby spinach for some added greens.
Ingredients to make Roasted Capsicum Pasta
- Capsicum
- Brown onion
- Olive oil
- Paprika
- Salt/pepper
- Cooking cream
- Tomato paste
- Minced garlic
- Pasta of choice + pasta water
- Parmesan cheese
- Fresh herbs
How to make Roasted Capsicum Pasta
- Preheat oven to 180°c. Cut up capsicum and onion. Add veggies to a lined baking tray with olive oil, paprika, salt, pepper and roast for 30 minutes or until soft.
- Cook pasta as per directions saving 1/2 a cup of the pasta water for the sauce
- Once veggies are cooked add to a blender with cooking cream, pasta water, tomato paste, minced garlic and salt/pepper. Blend until smooth. Add sauce and pasta into a pan and mix until all combined.
- Serve pasta in bowls along with some Parmesan cheese and fresh herbs. I also like to serve it with a source of protein – I usually do chicken!
