This Avocado and Chickpea Mash is a simple and delicious lunch made in minutes. I personally love egg salad sandwiches but I feel as though this would be a great alternative if you are vegan/can’t eat eggs!

- Canned chickpeas rinsed and drained
- Avocado
- Minced garlic
- Lemon juice
- Red onion
- Salt
- Pepper

- 200g canned chickpeas rinsed and drained
- 1/2 an avocado
- 1 tsp minced garlic
- 1 tsp lemon juice
- 1 tbsp red onion finely diced
- salt
